Ingredients
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1 tablespoon butter, melted
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil (optional)
- Toppings (optional): sprinkles, chopped peanuts, mini chocolate chips, etc.
Instructions
- In a medium bowl, mix together the peanut butter, powdered sugar, melted butter, vanilla extract, and salt until it forms a thick dough.
- Line a muffin tin with cupcake liners. Using your hands, press the peanut butter mixture into the bottom of each liner until it’s evenly distributed.
- Place the muffin tin in the freezer for about 20 minutes, or until the peanut butter cups are firm.
- Meanwhile, melt the chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until the mixture is smooth. You can also use a double boiler to melt the chocolate if you prefer.
- Remove the peanut butter cups from the freezer and spoon the melted chocolate over the top, making sure to cover the entire surface. Sprinkle any desired toppings on top.
- Place the muffin tin back in the freezer for about 10 minutes, or until the chocolate has hardened.
